Well... 100% not the coop aspect.
The big draw was, that these games are well designed and fun to play.
Them being coop was mostly just added on for fun.
I mean, look at the Contra games where one play can kill the other one by scrolling the screen too far (or not far enough).
That alone screams "afterthought".
Just imagine dropping such a 2D masterpiece because it doesn't have online coop...
Where you around when contra first came out ? I was, and bought it brand new for my NES and its big draw WAS that it was a co-op shooter on the NES. Same with Life Force and a few others.
How have you already played it ? also im glad you are privileged enough to have an internet connection that gives you lag free play on twitch shooters in remote play but i can assure you it adds significant lag for me in games. where as proper co-op does not .
remote play requires at least one controller though, so it's not an option for everyone like proper co op would be
But Huntdown actually allows 2 players on keyboard just fine. Default bindings are arrow keys + Z~B for P1, JKLI + Q~R+F for P2, with everything rebindable in-game.

Honestly, the default binds are weird and impossible to play in co-op without rebinding as there's some overlapping, but would still work perfectly fine on remote play as you'd both be using separate physical keyboards.
Steam Remote Play is not a solution to the problem. It lagging and freezing. I hope you will think about add an online solution.
