There's a new DLC in a few days though, so the bundle might be on sale then.
That being said, the standalone main game is truly magnificent as it is, and if anything the DLC detract from its fine, beautiful game balance, if only by a hair. You get the DLC when you want a more varied, wide-open, less min/max game.
It really depends on how experienced you are with 4x games. The DLCs deepen the content and some of the mechanics, but don't add different ways to play, so the core game isn't fundamentally changed by any of the DLCs.
You have 2 that mostly add scenarios (single player campaigns) and a new faction each, and 3 others which add events that enrich certain aspects of the gameplay (religion, characters, wonders).
If you're relatively inexperienced, the base game will already have enough to keep you completely absorbed. If you have some experience, I'd suggest going through each DLC and maybe pick the ones you're really keen to experience, as they can be a lot of fun, Sacred and Prophane especially.

Naturally, you can (and I'd recommend) play just the base game first and add the DLC you already own! But yea, there's a learning curve, even if you're a Civ/4X veteran.
EDIT to add that I just looked at the store page. I don't yet own the most recent DLC (Behind the Throne), but I can get the "bundle" that includes everything, but only charges me for the one. And the bundle is on sale, but the DLC itself is not. So I'm going to buy the bundle and end up getting 30% off the one DLC I don't have - tho I've not heard much good about some of the stuff they add, like Grand Viziers.
Don't be discouraged if you get your rear handed to you. Just try lower settings and read the guides. I think it took me around 8 games before I started getting the feel of it.
Also if you don't like a start position, just start over on a new map. It can make a huge difference if you're just starting.
