There is no real need to reach Lv.999 immediately, still there are many sets to collect in the regular way and you will get some XP in doing that also : ) Leave Lv.999 for the very last.
Anyway, I do plan on getting all the gear to level 99. With regards to the Kitmas, Old Master, and F/C/W set, are these the only 3 sets that can’t be grinded from opening chests in Kit’s shop?
I preferred to do every quest and loot every chest until they maxed out naturally, took about six complete runs but it was the time I most enjoyed : D
Old Master set (helm, armor, Ragnarok)
Faith, Courage, Willpower set
Crappy set (helmet, armor, weapon)
Kitmas set (Grrratitude, Hope, Family)
It is pretty common anyway and the Lv.0 cave (entrance is a bush) is filled with it. As you will go for the Kimtas set, you should be able to farm it too.
And yes, FCW is ONE level per run ^^' It goes better with the second game anyway : )
I know you haven’t played CQ2 or 3 but do you know if reaching level 999 is feasible in either of those games?
From the few scenes I checked in that video looks like they kept farming the most profitable monsters over and over, less likely they hacked the save or were able to savescum as on PC.
If you want to try it you should be already strong enough to slay those dragons in seconds : )
About CQ2 I have it on Epic and it is much better at maxing out everything including your character(s). Still there are few items that require to make several runs before to max them at Lv.999 them too : O But it is much less boring and faster than CQ1 ; )
CQ3 yes, I don't own it (yet?) but from reading comments in the forum looks like many went up to Lv.999 and maxed everything with ease. To the point that the game felt dull and short for many, but it still has no Mew Game mode (that will probably be patched in later).

Edit: after checking the same Delta Ruins on the Steam version, those dragons nets far less than in that video, about 30%, so for sure something has been changed on Switch : /
