Wetness is how many water tiles are present in the exhibit.
For each of the tile types there are three biomes, if you open up the information panel there is a graph of the biome. Raising/lowering terrain and adding water will morph the terrain. The red dot indicates your current biome and will indicate if you need the terrain more rugged or flat, or to add or remove water tiles.
If you play through the tutorial it helps you through the terrains/biomes
