Time Keeper feels insane
Finally picked this game up for the first time after sitting on it for a few years, getting distracted.

Made it to the Time Keeper on my 4th or 5th run, got her down to about 30% HP, but I started getting annihilated. Couldn't keep up with my parries or dodges.

EDIT: Also any tips on the Concierge (no damage), or Pirate Captains would be great. I tend to go for a red/green combo run (primarily focusing on melee combat with the shields being a big help).

Any tips?

Screwing with height and dive attacks help me a lot when it comes to dealing with Pirate Captains.
You can manipulate Concierge's aura timing by not dealing damage when cornered(harder with DoT-focused builds).

You mean, you spread scrolls between these 2 evenly(primarily focusing on melee doesn't tell much in that tegard)? You should pump as much as possible into 1(offstats' HP bonus drops quickly, the bit needed you should usually get from pick-from-only-two-stats-scrolls alone, if not then 2/3 SoP's can be off-stat'd without too much worry).

Levelling two stats helps quite a bit since it means having a lot more HP, especially for newer players that are still learning on 0 BC.

For most bosses, wolf trap is ridiculously helpful since it prevents them from moving for a short period of time.
Time keeper is a fast boss, learning how to parry with your shield will help you a whole lot, but outside of that it is all about learning to dodge, something that will greatly help you through the game anyway.

The second part of the fight can be a bit messy with the giant downward attacks that are coming constantly on top of having to dodge a 3-hit combo.
When he grabs you, use your shied (you can parry the grab itself as well if you are good at it too) to reduce the damage from the hit that comes after that.

Melee definitely makes the game a bit harder for a new player compared to a ranged+traps set of gear, but once you learn to use it properly and have your dodges at the right times, it allows you to unleash a massive amount of damage in a short amount of time, so keep practicing and you will get better at understanding when to attack and when to dodge.

Oh yeah, I can parry almost all of the Time Keeper's attacks until she starts spamming the whole screen; I start to lose track of what's going on around that time and start missing things.

And huh, I would've thought wolf trap would be ineffective on bosses (I've not used any items in a boss fight yet, been trying to do this Souls-style, lol).

You have 2 weapon slots and 2 power slots, and while you want to avoid relying on a specific power or weapon to the point where you can't function without it, you definitely benefit from using all of what you have.
wolf traps, status effects, mostly everything works on bosses, it just end much sooner and for status effects like freeze they gain higher resistances (like all enemies but usually you don't notice it for the others).

When he zooms all over the place, remember that if you can't parry that yet you can just double jump.
The jumps are a part of your kit, and the hand of king (the next boss after time keeper) will teach you the hard way if you don't learn it before that (he has attacks that you can't really avoid without being in the air at the time).

By the way, I had missed the pirate part of the question, so better late than never.
They are extremely dangerous up close, but you can parry his cannon balls and his overhead swings, parries are nearly overpowered against that specific enemy.

The easiest way to beat Concierge with no damage taken on 0 BSC in my opinion is as follows:

Have a decently strong bow, (preferably quick bow), wolf trap, ammo x2 mutation. If you have light speed power up this would be even easier.

All you do is stay on one side of the arena, throw down wolf traps, and just fire your bow at a safe distance, whenever the boss uses fire strike, the one that sends a fire trail on the ground, just jump to dodge, if you have at least one wolf trap on the floor it will catch him when he uses his leap move as well. When the boss gets close, just tumble past him or use light speed and run to the other side and set up with wolf traps, and boom, you beat him without losing health.
