It's sort of like having additional doors or paths (well, literally that). The more DLC you have the more branches you can explore that have different types of enemies, themes, and unlockables, but they're roughly weighted the same. In level 1 for example you can choose to go to path 1, 2, 3, or the castlevania path. The castlevania path will give you the castlevania levels, enemies, unlockables, and content, and eventually you'll come out of that path and it'll branch back into the standard game. This works the same for the later parts of the game as well, if you choose to take the paths later.
It's not designed so that you must complete/finish the game first before you jump into it, and actually I started the castlevania stuff before even unlocking all my powers or completing the game, and it was still a super natural experience.
atm the base game + all dlc costs as much as the base game alone. i have over 800 hrs in it and keep coming back. if you like these kinds of games, this is one, if not the, best of its kind.
Get the DLC. Castlevania DLC has fun weapons that you can use whilst you unlock other stuff.
That said, if you are here mostly for the Castlevania, I think you could get away with having just the main game and new DLC and be happy until you decide to have more. As soon as I tried it out, it felt like home (Castlevania being a game series I grew up on).

I have had this game for a very long time and picked it up and put it down several times. After a lot of updates and dlcs, this game has been just as fun if not more over all these hours. These developers have done a beyond amazing job with this game and are continuing to do so! I think that if you have the money, it's definitely worth picking up if you like this type of game, you will have fun unlocking all the content :)
