Each item has its own colors. For example Blood Sword will always be red, Sadist Stiletto is red and purple and broadsword is green. It will be like that in any run. So if you learn, for example, which items scale with brutality those items will always scale with brutality. But as a way to know that just from seeing them... I don't think there is a way; I may be mistaken though.
I mean, fast melee weapons and fire, bleeding weapons/skills usually scale with brutality, ranged weapons, electric and poison weapons/skills usually scale with tactics, and slow weapons, ice weapons/items, shields and things which reduce damage or stun enemies usually scale with survival. But it's not a perfect rule.
You can see this for all the items: https://deadcells.fandom.com/wiki/Gear
And you could find this helpful: https://www.reddit.com/r/deadcells/comments/9lkdwj/devs_need_your_help_we_have_some_questions_for/
You could also try previous versions of the game which some, including myself, would argue are better than the more recent versions. Up until 1.9, once you upgrade the forge, weapons have bonus scrolls affixed to them, which show the symbols of the stats right in the weapon UI. Heres a screenshot so you can see what Im talking about
