You might know most of this next part I'm about to explain but to confirm: there are three main runes on ground/walls. The wall runes that you have to hit three times contain hidden items such as; food, gold in form of malachite/amethyst/sapphire/ruby, and rarely a scroll. The blue ground rune you activate a challenge portal with, if you clear it without getting hit within the time limit it shows, you will get 10 souls and a chest to get an item from. Last ground rune is the orange one which you need the Belier's Rune for, you'll find it in the Ossuary and it allows you to break the ground that contains those orange runes.
Most importantly don't feel down. I see that you've only put 7-8 hours like you've stated but trust me that's not that much in this game. A lot of players myself included were at that stage too, we couldn't beat the first boss for a while until we got the patterns down, now it's a breeze, as you keep playing you will get better, that's the reality in any rogue-lite/like game. I hope you will enjoy the game after giving it more time.
And chances are, you're missing out on some extra stats from scrolls because occassionally they're hidden in areas that aren't accessible until you get the runes to get to them, though that's pretty rare with scrolls but not impossible (and for some INCREDIBILY stupid reason scrolls can be spawned in secret tiles instead, too, gimping you out of a scroll unless you find it).
Your best shot at progress would most likely be trying to obtain the runes you're still missing. I heard the stomping rune was in the ossuary or something...? Which is easily accessed from the promenade if i remember right. And the climbing rune was in the new sanctuary area, which you can only initially reach, i believe, by going through the toxic and old sewers, just be careful with the Watcher boss that is on that route, he's a mean one (probably requires the stomping rune though, also, REALLY helps to bring a shield for the elite fights in those areas, especially the sanctuary where you can reflect projectiles back).
Maybe a survival build would help you out? Picking a weapon that benefits from green stats, a shield, and going survival whenever possible, or picking tactics to boost the skills you find?
Or so i heard it is a effecient build, anyway. Personally i just prefer a careful balance between brutality as main stat and HP as second, with lots of attack power to shred enemies in one or two combos (unless they're really big ones), and just enough HP to survive hits. But this playstyle tends to be a little risky, but also fairly rewarding, and compatible with most weapons you find.
Well that ended up being a bit much, maybe it helps? Just keep at it, it'll work out eventually, i mean, if you like DS then you'll be able to learn to beat this too. Probably helps to have a goal to achieve as you die and start new runs, like attain runes, unlock important upgrades (like retaining gold, recycling, the potion, being able to reroll shops and option to pick shop catagories, the latter two help immensely late-game).
The bridge boss is super easy. You can parry him, trap him, freeze him, burn him, use the magnet granate on him etc. If you still have problems try to put all your points into survivabilty and get a heavy crossbow + shield. Also get 2 freeze granates or 1 freeze + 1 magnet. Also parries are your best friend vs the assassin.

Lol, true. I do love the game. Super challenging and fun. The more you play the more you learn thats for sure
Weapons really don't matter too much, just make sure to get all the upgrades and focus on one stat throughout the game. with 10 Brutality you can slaughter the first boss in about a minute. if you aget a semi decent weapon.
For Early progression I recommend brutality/survivability builds while later tactics/survivability builds or mostly survivability + a bit of brutality or tactics grant you better chances to reach the final stages of the game (which I really wouldn't bother at the beginning ^^)
Another hint: It's hard to guess at first because you need to try a lot but you definatly don't want to unlock a lot of the weapons and spells. Once unlocked they will appear throughout the game and if you unlock a weapon or spell you really dislike you're kinda stuck with it. It will appear all the time when you really want one of the few weapons you really like. I wouldn't even say it's about balance but about preferences. A lot of people really like the whip while I can't stand it. Yet I find it every 3-4 run -.-
Start skipping all enemies in the first two areas if you don't need their blueprints:

For all non-bosses Freeze grenade is stupidly easy to use. . .
Just freeze, roll behind target, and full combo
Items with +stats or -Damage% are super valuable. . . take these unless they break your build
