so how much damage do I need to kill a radscorpion?
Because no matter what I do, they never die. unless I start shelling out a couple hundred bucks on lunchboxes for the chance at rare weapons, I can't get anything stronger then I have now.
Are these things supposed to be borderline unkillable and completely destroy my vault whenever they show up?

Yes, because this game is stupid.

they really need to either lower this thing's health, or its damage. at this point, I'm fairly certain a deathclaw is actually a lot easier then it.

Deathclaw level depends on average dweller level while radscorpion level depens on level of the room it has spawned. Probably you've been upgrading too early, expand first, upgrade later.

at this point, I can't expand, because the bar for power is more then half way up, meaning if it drops below half, I lose power in rooms. I had to wait until I got to 60 dwellers just to switch to nuclear reactors to get enough storage so that at least if the radscorpion attacks, it won't make me lose power. just all my ♥♥♥♥♥♥♥ dwellers.
honestly, these things are simply not fun at this point. they have far too much health to deal with and can wipe whole rooms of dwellers in seconds. I've tried going with what the wiki suggested on clearing the rooms so only one dweller fights it, but that isn't helping much. I'm still loosing power in my rooms, it doesn't die whatsoever, and worst of all, they keep popping up with the frequency of radroaches. it's starting to make me not want to play this game. At the very least, it's making it feel like a punishment for leaving the game open and running.
Is this what the devs wanted? people actively trying to NOT play the game just to avoid those ♥♥♥♥♥♥♥♥ scorpions? because I'll gladly stop playing. the temptation to buy lunchboxes is very quickly dying off thanks to this enemy.

Right, seems fighting them AT ALL is wrong. since they don't multiply, I can just leave them in an empty room and abandon the next one when they move. Still kinda annoying, though, since I still can't build up any power thanks to them. no mater how many plants I have staffed, I'm not able to stockpile enough. doesn't matter in I have 3000+ storage if I can't build up enough to slake the damn thing's hunger.

The difficulty of defeating a RadScorpion is based on the size and level of the room. I've seen a 2 wide level 1 training room, with 2 lvl 1 dwellers armed with modest weapons take out a RadScorpion in a few seconds. This is also true for fires, RadRoaches, & MoleRats. The best strategy is to try to avoid upgrading rooms till absolutely necessary, and only when you can staff them with higher level dwellers with the best weapons you can craft/find.

well then, they seem to have scaled its stats by room saize/rank a bit too steeply if it's impossible for level 30+ dwellers with rare weapons to put a dent in it.

the level of a dweller does nothing in this case. only HP of a dweller and weapon damage will make things easier. you need to train the dwellers E when you have access to the rooms and collect high E outfits to raise your dwellers HP above average.

EDIT:
to be more accurate:
the level of the dweller does nothin on it's own (for low E dwellers) - the level is indeed helpful if the dweller is trained to have max. E as this ensures he has also max. HP

I've had a full size and fully upgraded room full of people defeat a RadScorpion. It just takes longer and if the dwellers don't have quite enough firepower it may live long enough to move to another room.

Why are people having so much trouble with radscorpions? I don't understand it. I play on Normal. Is there a difference between the PC and mobile version? I'm on mobile and have never had any issues whatsoever. I just make sure everyone has a decent weapon, all the rooms are fully occupied (including storage) and they're trained. I also try to keep 3 width rooms to a minimum.

Sometimes I get a rad scorpion and it goes from room full of people all armed heavily and they are wailing on it, and it moves to another room then another then another each room has 4-5 people armed with 13+ damage weapons in them and a mr handy helping and the thing NEVER DIES it just drains all my power and tkilles some people and then leaves....WTF?

the only rooms i have in my vault where Rad scorpions don't die and move on are empty rooms (half of my vault, separated from the rest)
i have to take care of my dwellers when a Rad scorpion moves into one of the training rooms (2-3 wide and upgraded) with my lowest health dwellers in. would be way less dangerous when i would keep those rooms 1-wide and don't upgrade them.

all working rooms can handle RAD scorpions in seconds (+17 damage, max. health, 6 dwellers).
never saw a RAD scorpion jumping FROM there.

yes, I can confirm that it is far easier to kill deathclaws then a single radscorpion. I'm not sure what is happening, but max strength and 10-13+ damage weapons aren't enough to kill it before it jumps. it...shouldn't be that powerfull just from spawning from a 3 wide rank 3 room, right? that would be utter ♥♥♥♥♥♥♥♥ if it were...
