I had a dialouge where I choose a friendly option and it didn't end in fight, so it probably matters sometimes.

Incorrect, thankfully. Otherwise what's the point?!

It does matter in certain quests. "Plot" quest items, no. But often you may miss out on something like Nuka Cola Quantum for example. Sometimes even a lunchbox.

If you get one of the quests with the raider group that has a silly name and warcry, there is an encounter where you can talk the person into leaving the raiders which will not cause a fight to break out.

"Gary" is a good example of a dialogue where the right answer matters.

But like agaisnt raiders... I once chose a, I think, friendly option and they answered "what does a dweller know... Die!" or something like that

Wait until the holiday updates. They give you special missions that reward you with an outfit for whatever holiday it is. While I don't think it's possible to NOT get the outfit for completing the mission, if you give certain dialog answers in that mission, you will miss out on extra copies of said outfits.

"Q: Does what I pick in a dialogue choice matter?

A: Depends. A good number of dialogue choices are fluff and don't make any difference, but there are those that do matter. The ones that do are almost always worded such that their effect is obvious to make it easy. "
