how do I remove rooms?

Click on the arrow like you would to upgrade and there is an option to destroy the room.

As Barf said, but remember you can't destroy a room that is connected to two rooms. This means if you want to remove a room that's in between others, you will need to deleted an end room first.

Or have an elevator at the other end connected to the floors above.
