Citizen Thought Bubbles

When a citizen passes the restaurant but does not go in they have a thought bubble above their heads or somewhere close to that, is there an explanation of what each of these mean? Some of them I can guess but there is one that loks like a book with a chef symbol on it that I cant figure out what it means. I'm thinking it might have to do with my menu but I'm not sure, any help is appreciated.

i'am pretty sure it's your pizza on the menu. most likely you dont have the right pizza for this group of people.

There is yet no explanations.
Devs have reached on that on some threads. and they will indeed also work on sharing more clear informations about all the bubbles.

Some are very obvious (probably all the same ones for all of us) and indeed that very one I also have no clear statement about what it truely is.

But I guess same as moepmoep0815.

At first I thought it was chef quality, but even with high quality pizzas... I still have it.
What is weird though, I have pizzas made specifically for that group, with mostly ingredients they like. Though those pizza do not reach a green smiley face for them on the creation bar (lower right side)
