Suggestion: build hump yard like Maschen Marshalling Yard
Most accidents in shunting traffic in Germany occur when freight wagons run over a drain,
see "Maschen Marshalling Yard".
In Derail Valley everything is available for the construction of a marshalling yard:
gradients, tracks, switches, wagons.
What is not yet available in Derail Valley:
The freight wagons run uncoupled and unchecked down the mountain.
Very dangerous!

And what have accidents to do especially with Maschen (BTW the second largest marshalling yard of the world)?

Those hump yards and their operations are standard since over a century.

It's not in the plans currently, mainly due to sheer amount of other things we have to focus on. Perhaps this will be revisited in the future. We already thought about adding hump yards of course :)

It may not be what you're hoping for, but at least it's something:
Given what I've seen in the trailer about the new coupling system, I think you might use the food factory somewhat like a hump yard.

South of the food factory, the line leads up into the mountains. You could stop a freight train up there, climb on its rear wagon, and uncouple it.
As long as you do not release the brake valve, the wagon should be able do roll downhill. I think. Maybe. (@devs: Could that work?)
Set the switches, and as soon as the car is on the right track, release the brake valve to stop the wagon.

But, as you said, it's quite risky, because once you've applied the brakes, you can't release them again.
(At least not without a loco to restore the pressure in the brake pipe)
So you have to get the timing just right. ;)
Also, the valve might be hard to reach, and there's no tachometer to warn you if you go to fast.

The brakes of the wagons aren't touched while rolling down, there are (automatically controlled) brakes at the rails which brake the wagons to the proper speed.
Also nobody climbs on the wagons and rides them...

You're completely right!
I'm only describing a workaround in the game, because we cannot place brake shoes on rails like you would do in an actual hump yard. (Not yet, at least)
