Gotta remember Dakotaraptor isn't an apex predator. It's not exactly meant to be going after things like Tyrannosaurus, Triceratops and Ankylosaurus. ANd it really shouldn't be attacking eddies either in my opinion. So you can get bucked off pretty quick if you try to attack something you really shouldn't be.
So when you jump on an animal, again preferably an animal that is suited for a predator like Dakotaraptor. Right clicking will help you keep balanced, when the slider gets too far to one end, you need to repeatedly press RMB to flap your wings and keep balanced while your prey is thrashing about.
When you've balanced enough pressing LMB will provide the killing blows.
It's a shame we had to wait this long for a game that tries to take prehistory seriously. But it'm glad that it's finally here.
But your raptor stops growing at age 14 if i recall correctly. I doubt it'd be the same for every other animal you can play as.
