Why noone uses Online lobbies?
This game has around 150-250 online at any given moment but all online lobbies are empty. I doubt everyone is playing pve, so what is the point of sitting in private rooms with 1-2 buddies when you can just go to online lobby and find much more people to fight there? What's the point of sitting in small discord servers when you can just gather in online lobby and play. Can someone explain what logic this fighting community follows?

People prefer fighting opponents that are geographically close to them to reduce lag, and this often goes though player rooms created by people who add each other on Steam and/or Discord. That way, they can also exchange tips and train more consistently, and can find opponents on their level.

Also, global lobbies introduce extra delay IIRC, which is another reason why player rooms are preferred by the community.

Everybody is in a private Discord server that you cannot access unless you get good and run into one of the players randomly and they feel like inviting you.

This game can only be played against friends or in circle jerks, just get something else to play until they make a new BlazBlue.

Uh... No? There are several public Discord servers dedicated to the game, and some others regroup players from several fighting games as well. Maybe good players like to gather on the one you mentioned, but it's not like it's the only one. The "BlazBlue Centralfiction" and "BlazBlue EU Open" servers come to mind, then the "EU FG Community" one which offers matchmaking for several games, for instance.

Now granted, I haven't looked for servers from regions outside Europe because I don't live there, but I'm sure there are fighting games servers and communities that you can freely join as well. Plus there's always the matchmaking list in case you don't want to use Discord and/or don't find servers.

That's absolute BS.

In fact, the EUOpen posted right above is so full of people, I had to take off my "Looking for matches" tag because ALL the people looking ALL THE TIME got so f-ing annoying(Discord devs: PLEASE implement role ping mute TT_TT).
