How do trees work? Spacing/season
Seeing as how there is much more land than there is time I'm curious about them. So they seem to each have their own season. Takes 28 days to grow.- that's pretty much the season. Since you don't water or fert them, do they still produce off season?

Ie I plant a field of spring fruit trees, spring is over before they grow, do they still produce in summer,fall,etc? Or do you need to plant the season ahead (peach tree's)

It says they require space. or they won't grow right. Is the center of a 3x3 block fine? Can the fruit drop on the edge of the field map? (just thinking spacing effeciency)

Are fruit tree's subject to weird mutations as well? (will a farm peach be the same as a mt. peach, or beach peach). I don't really understand how that plays into it, as my HM is more old school and this element is new to me.

Will they grow off season. Planting a fall tree in early summer for example, or just wasted space?

All good questions! I haven't worked with trees yet (been spending my money on animals and upgrades) but I plan to mess around with spacing and planting locations today.

I'll post anything I discover about them a little later, unless someone else already has the answers?

Trees will grow outside of their designated season (in fact since most will take a minimum of a season to grow, I'd recommend planting outside of their favourite season).
Trees will not fruit outside of their designated season; they don't mutate, but as they grow older they will produce great fruit (this will take a few years).
You are correct - trees do like space! You will want to ensure they have a full ring around them of unplanted soil to keep them happy, and not be on a map edge:

I'm planting mine like that and my peach tree just gave its first harvest.

Which happened to be a great peach... Which is highly unusual.

Aw crap. Now I have to cut down both of my fruit trees. Actually, can a tree be on the corner of a plot?

From what I've seen, it doesn't actually matter where a tree is planted, as long as they aren't planted touching another tree. Grass and rocks don't seem to hinder them growing.

When planted side-by-side they just never fully grow till you chop one down.

I can confirm that they DO grow beside pathways. This is how I have mine and I just got oranges:

The lines represent where the edge of the pathway is, the '.' are the pathway.

They grow beside anything but trees it seems(didn't test walls).. So you can plant grass and let it die around your trees to stop other trees spawning near them (+ the annoying rocks and grass that you can't see).

I did mine like:

I can comfirm! I planted my trees with only 1 tile between and they grew fine.

You are not allowed to have another tree touching your tree. If two trees are touching they won't grow. It's fine if it's on an edge/pathway. I have used the below pattern (x is a tree, o is non-tree)
