if it's white it's normal quality, you can fertilize it to get a better quality or to keep the quality stable so it won't drop to blue.
Gold is the best quality as long as they are gold you don't have to fertilize only water.
crops out of season most of the time are poor quality and need to be fertilized every day, these crops will have a hard time during a storm. if you have unlocked all the fertilizer you could use high end fertilizers to help your crops survive but they are a pain to make and cost a lot of rare materials or money.
1. Blue- poor health
2. White-Normal health
3. Gold- Superb Health
The lower you go the more likely your crop dies, the higher you go the more likely that it mutates.
Things like roses/watermelon are a lot more fragile than other crops and need super fertilizer to survive storms. I have also grown low value, 4 day crops out of season that only needed 1 round of fertilizer.
