Hello, this is a pretty complicated question so I’ll try to simplify it.
There’s going to be four basic ways to balance mine health that I can think of off the top of my head and a few tips based of my gameplay experience.
Changing health levels in the mine:
1. The tool upgrades Gus sells don’t just allow to cover more area, they decrease the amount of energy needed. The higher your tools the more rocks you can break, soil you can dig.
2. Altering starting to raise friendship with the harvest god/goddess and Gorgon they will send you mail request. The reward is the ingredients (and recipe) to make bread that raises your total amount of hearts.
3. Use food in the mine to recover hearts so you can go deeper. This becomes a lot more viable as you play. Bread can be a touch expensive, but once you establish a good baseline profit, it will help you get extra jewels and floors
4. The mine is set to checkpoint every five levels. Once you get to level six, you can start on level 6. So checkpoints at 6,11,16, 21, etc. this will allow you to break the mine in chunks.
Now for a couple tips based on gameplay experience.
1. I find that not often than not, the next staircase is found closer to the current ladder, so I always start where I come down and spread outwards away from the starting ladder.
2. If you don’t need something specific, don’t be afraid to ignore rocks and save your energy for digging, getting to the next checkpoint allows you to get deeper and higher value gems from the rocks, so don’t feel bad about digging instead of ore hammering early on.

I just looked at this guide for help with something else and found the "Mining Trick" that will cut down the areas you have to check by a lot. Basically make a grid that's either 3X3 or 4X4 depending on how far apart the rocks are placed, and if there is no rock or the escape ladder in one of those 3X3/4X4 squares then those are the ones you need to dig in. Best way to do it is to find the ladder down before mining the rocks.
