PS: Sonic didn't age well but the mobiles port improved it so much.
WHAT.
Sega is supposed to be releasing updated ports of the classic games in a collection (which will include widescreen support). Until then, the best way to plays the classics is probably on mobile, because they were rebuilt from the ground up specifically for that platform. You can only get the emulated S3&K on Steam, though.
Out of the original titles, I like Sonic 2 the best. Sonic & Knuckles was my first, though, so Mushroom Hills will always have a special place for me.

There's tutorials on how to get the decomps running, but basically you just drag a file from the apk and put it in the same folder as the executable.

You can reuse the roms under Kega Fusion or even try Sonic 3 AIR.
I advise against starting with Mania. Get the Sega Genesis Classics, start from there with Sonic 1, 2, and 3 & Knuckles. Don't be ashamed to save state or rewind with the first two, but do try to clear them without the accessibility features. Don't worry about going for a perfect clear (so to say: All Chaos Emeralds), just try to beat it normally.
If that piques your interest enough, maybe look into the Master System Sonic 1 and 2, otherwise move on to CD. Fair warning: Master System's Sonic games are pretty rude at times with some situations it puts you in, and CD has a few frustrating points (just a few THANKFULLY)
If you feel comfortable enough with most of them (Master System not included), THEN move to Mania.
Other games to consider, with some warning in some cases:
→ Advance series (GBA): The third one is pretty unfair at times (that accursed Egg Chaser), but overall this is a very fun subseries. A bit on the easy side (makes sense, having to deal with battery involves having some saving)
→ Sonic Pocket Adventure (NGPC): a mashup of Sonic 1, 2, and 3. Doesn't have the best music, but is decent considering the system.
→ Chaos and Triple Trouble (GG): Suffers from being on a smaller screen, but for whatever is worth it should be considered.
→ Knuckles Chaotix (32x): REALLY fun game, nice art, but nauseating if you have Motion Sickness because of how hard the camera swings at time.
→ Rush, Rush Adventure, and Colors (NDS): Pretty much successors to the GBA ones. And the best handheld-exclusive Sonic experience after the GBA.
→ Sonic SMS Remake ( https://sonic-sms-remake.blogspot.com/ ) (SPECIAL MENTION): Fan effort to remake and expand the Master System and Game Gear games. Very beginner-friendly and a third entry is in the works.
→ Sonic Robo Blast 2 ( https://www.srb2.org/ ) (SPECIAL MENTION): Original fangame made... FROM DOOM! Well, kind of. It's a heavily modified Doom Legacy engine, to the point there's even a Kart mod for it that you can play online.
There are other fangames I have my eyes on, but unfortunately they are not done yet (such as Sonic 2 HD)
