how do you perform the Sonic 3 and Sonic CD abilities:
specifically the Sonic Insta-shield (double jump with no barrier) and the Sonic CD holding UP and JUMP to peel out? they got unlocked for me, but they don't work in Mania Mode nor VS mode (and maybe time trial I forget if I tried it)

You need to hover above No Save mode in Mania mode and it will have a prompt for secrets below it. You can then choose how you want to play. Be aware they only work in No Save mode.
