unpacking is generally reading the initial file format, and unzipping it in its own decryption format that it was compiled with, essentially its just the same as a ZIP file, but to protect itself from people like us they encrypt it using their own keypasses.
This generally unpacks the game with some stuff, but the game uses Version 5 of the typical ROM format we are use to (see Sonic Retro), so some of the unpacking is going to be a hit and miss.
Sure someone will figure it out eventually though.
Only the .exe is protected by Denuvo.
A custom format, on other hand, can be organized in a way so that the game can keep that single file open while running and locate textures/levels/etc. to load very quickly.
Neither encryption or compression are commonly used, though sometimes things like textures are stored in an format that's faster to load up on GPU (DDS, DXT, TGA) rather than easier to view/edit, in which case custom tools (like shown) handle conversion for convenience.
