The options for setting the system-level default values for the playback/recording devices are kind of early. I still use the functionality myself (especially by the command line, so I can switch between my headset and speakers :))
What you'll want to do (for the recording device) is to go to Options > Recognition and choose the device that the speech engine will use. This changes the speech engine input for the entire system (and not just VA), BUT, the chosen device does not have to be the default recording device.
For playback, each individual sound can be sent through its own channel when, 'Integrated Audio' is selected from the Options > Audio > Audio Output Type. I have it planned to be able to set a default device within VA (that is, not system-wide), but there is no ETA on that.
Text-to-speech (TTS) output currently goes to the default audio device, even if you switch it in control panel. The later betas of VA get around this limitation and let you specify an output device for each instance. Again, there are plans to allow a non-system default output channel from within VA.
