Farming isn't really intense but it does require that you check on things every few hours in my case. Having my Shai there all the time allows me to pop in for a few minutes and do some harvesting or weeding and then go back to another character.
It works vice versa too. Sometimes I need certain ingredients that I can't buy from the market and they are far away from my base in Heidel. Having alts planted in various parts of the continent and being able to procure these items saves a lot of time traveling.
So, my advice is take your pick, and don't be afraid to experiment.
Also, my Guardian is 60+ and didn´t regret a singel second playinger, a good choice.
Easiest rotation, and can farm most areas with ease until some a-hole zerker comes, grabs you, and smashes you into the ground.
