But as a general rule, you want your 'active' (ie. take energy) life skills on a character you intend to play a lot. Energy regeneration is only any good when that character is online.
For all the skills that don't need energy, you may as well concentrate those on a single character. Ideally a Shai for the passive weight limit increase. This is especially so for any kind of imperial delivery, those boxes are heavy and you're going to want all the weight you can get.
Personally I've just dumped everything on my Shai, except barter and sailing, which are going to go on my Corsair.
The Shai starts at the Professional level in Gathering and Alchemy.
They have four GREAT life skills.
Two being "Gathering Whiz and Alchemy Whiz" which causes your leveling in those two skills to pop faster.
The other two "Joy of Gathering and Joy of Alchemy" which causes you to gain MASSIVE combat experience just performing those skills. You're gaining combat levels just gathering or alchemy without having to grind. The only reason you'd need to grind is to gain skill points.
As already mentioned by DarkFenix the skill "Light Bag" greatly increases your weight limit better than the other classes at each level your character gains.
But, Shai is your best bet for everything else just because of the extra weight limit.

Swapping a Shai in for cooking, farming, and processing. Still like to use Maehwa for gathering and use fishing to make money while getting her energy up overnight but maybe it's still not worth it?
Shai is a life skill trap in the sense that you won't go back to using something else for it once you try it lol. As for Corsair, I haven't read of any sea related life skill passives for her and I doubt she will have any. If she does though, they won't make much of a difference to warrant starting over. As for using Maehwa for gathering, if it already has good weight limit or if you have a lot of transaction maids/storage maids then I see no reason to switch off of it for this specifically since the biggest hindrance to most useful life skills is weight limit. Gathering, Cooking, Alchemy, Processing, and Hunting are all fairly dependent on your characters weight limit. So if you can move what you gather off of your character without having to run back to town every 10 minutes...you should be fine.
However, fishing overnight isn't a great means of spending your time unless you really work at leveling your fishing which takes forever, getting 1300+ Mastery for it, and afk fishing at Oquilla's Eye or in the sea for ancient relic shards (most towns are Exhausted fishing levels and take forever to catch a fish)...it won't be time well spent. Its better to spend this time afking basic stuff to level cooking or processing overnight instead. Cooking beer or processing flax for example.
