Giant take more time to work on the node. if you are like always on i just recommend you to get goblin but if you always afk for more than 10 hours at a time giant or human will benefits more. Since Goblin work fast and bring the resource faster but giants they carry more load so they work longer xd.
I´m sticking with the hard numbers, yield just depends on work&move speed.
The travel time obviously gets more important the farther away the node is.
Use Giants&Goblins mainly for nodes that have no added resource and Humans for all the rest.
They have by far the highest luck so you get more of the usually very important 2ndary resources.

Doing Humans and goblins since yield does seem to be the product of work/speed
When you get a professional while rolling workers at the foreman, definitely keep him.
