If you want to know play all 3 classes to lv 56 and do the awakening quests (makes playstyle vastly different with a different skill set). I recommend leveling 1-2 alts to 56 anyways as you will want them for world bosses.
Witch: lightning & earth (frontal block & more range than wiz)
Wizard: fire & water (better black spirit rage skill & rumor is slightly better solo pvp utility than witch cause he can grab instead of block)
sorc: dunno never played
I find the playstyle of Witch can be a little stilted in comparison but both Witch and Wizard have a very useful healing ability that is useful for party-based play and guild activities. Prior to Awakening, witch and wizard are the same class. I would say that post awakening, Wizard is more Battlemage style and Witch more Ranged Mage style.
Witches however are noisy as ♥♥♥♥ and you will likely be driven insane by all the squeaking, squealing and vocalisations. Unfortunately if you try to turn he stupid noise volume down, you end up turning all dialog down. This is the main drawback to witch for me. Also they look like idots when the run but that is a matter of personal preference.
As far as other classes go, I have both a 56 Ninja and Mystic. Both are very fun and have good combos. They play much like you'd expect although Ninja probably requires a slightly higher skill level over Mystic at this point to get the most out of the class.

In comparison even though they are technically "spellcasters" Sorceress's are mostly melee ( and almost entirely melee post 56), also as they have no grabs and weak cc they get murdered by most other melee in the game ( unless you are one of the top 1% with them, then you can post a whole bunch of videos online of you wrecking ppl because with great gear and perfect combo's they have one of the highest burst damages in the game).
