This is different for every Tier, but a horse becomes a "Courser" if they know certain skills (the hither the tier, the more skills they need to learn to be a "Courser").
What this does:
1. Horse sale price is increased.
2. When breeding the horse, if both parents are coursers, then the foal will be born knowing two skills. If only one parent is a courser, then there's a 50% chance of the foal knowing two skills at birth.
3. If a Tier 8 horse becomes a courser, they can be "evolved" into a Tier 9 horse when those come out. (Small chance, lots of work, think of upgrading an Alchemy Stone for comparison).
