Probably not. From the FAQ for the PS4 version:

Is Robinson going to be playable without the headset?
Robinson: The Journey is a single player game designed and developed to be experienced in VR.

Well, I tried this without having a VR set and it doesn't launch at all. There's no error message, nothing happens. I don't know if that's the reason. It's worth mentioning however that as of now the store page doesn't state that a VR set is REQUIRED like other VR-only games do so I'm still not entirely sure. That's a pretty simple yet big thing to ♥♥♥♥ up at launch so if they did, lol.

I see now that they also don't have the proper VR tags on their previous dinosaur island tech demos so I guess they're just that incompetent when it comes to publishing their things. Even with part two which has a blurb about VR requirements it's just pasted in the description, it doesn't have the Steam orange frame with the requirements notice. Chances are this is the same. Sigh.

Notice how they don't actually say 'no" or "yes?" How hard is it to put a "no" or "yes" right in front of that statement. So now we know they designed and developed it to be experienced with VR, but it doesn't actually say that game play without a headset is not possible at all.

Now game devs are politicians.

They're just discussing "alternative" requirements. ;P

They have now updated the page with the proper tags. Although it's not nearly prominent enough that it only supports the OR. All you have for that is that there's an OR icon but not a Vive icon to the right of the page. Granted, Steam probably doesn't have a special notice like the "requires a virtual reality headset" frame, but that's probably because they didn't really expect OR only games to show up here with OR pushing their own storefront instead and I can't fault them for that. Now that it's happening they should add such a notice or alter the existing VR notice to mention which sets or standards are compatible but until that happens Crytek should have made it clear at the top of their description rather than ignore it altogether like they ignored putting the VR notice at all to begin with. At least you can get a refund via Steam when you realize it doesn't work for your system but it's an annoyance that can be easily avoided if only Crytek shows they care a tiny little bit. They've still yet to update the pages of the other VR products with the proper notice but at least those are free so it's no biggie. Maybe this is a marketing ploy by OR, where Crytek will eventually talk about how the Steam sales of their game aren't better than the OR store and how that is the store to be on for VR products or something, which would be logical the way they treated the release on Steam so far, but I don't know, either way it's a silly situation with no good reason to have existed in the first place and the game's getting rated (more) harshly because of it.
