How to increase overall happiness?
Alright, I build a high school, a cathederal, a theatre, cabaret, resturant, pub, build a hospital and a clinic increase everyones pay quite significantly, make housing free, issue a tax cut, turn all jobs to Easy-Does-It, build apartments for everyone to stay in, and the overall happiness plumets from 60% to 20%. Wut.

Click on the smiley face in the UI. It will take you to the happiness chart. Look at other things like crime or medical. Something is way off in your town.

In your post you say you put a single hospital, single cathedral, etc. Depending on your population I think you'll need multiple of the same building spread around your city/island, especially hospitals and cathedrals.

You didn't mention having a police station for one, so if it wasn't just that you forgot about it/didn't type it, but in fact that you don't have one, you ought to because you might have unhappiness due to crime. And also take into account environmental happiness too.

You can also access the happiness charts from the book, by clicking on the happiness stat. That book is full of info about your island, and many of the lines are actually links to other more detailed graphics. Look at it to see what is going wrong.
I'd also suggest trying the tutorials as they'll give you a good understanding of where everything is and what they all do.
