If you are having encumbrance issues, don't buy more supplies than necessary.
Unless you're mining, in general you're never more than 1-2 days away from finding more supplies. If you keep around 5-8 you should always be fine, and you can always go back a save in an emergency. I'm not sure I consider avoiding a party wipe as "save scumming" but whatever, this isn't a roguelike! I reload saves all the time, that way I don't have to sweat every little decision.
Regardless, just lower your supplies to a number you're comfortable with and stop maxing them out.
(They are also easy to find by always landing on the campsite spaces, and some of the houses, too.)

My last game was super annoying (carrying capacity issues) but then I made a party with 3 minotaurs and very rarely have to worry about encumbrance now.
