Giving loans
My question is this: If I give a loan and the AI is unable to pay off the loan: I take the option of taking 'more', do I also get his possessions/buildings?

You get ships and goods, close-ish to the amount you loaned out.
I have never seen a builing being offered as an impound to make-up for the default.
