Can 8 people play on one screen with 8 controllers?

Yep! You might need to use a controller hub, but up to 8 players are supported!

In the same line of thought, for local multiplayer, can more than one player play on the keyboard? I have limited controllers and was hoping maybe 2 players could share the keyboard or use keyboard controls.

Unfortunately the mouse is used to control head swinging on PC, so it's not really feasible to allow multiple players to use one keyboard. If I hear enough complaints about this I may try to find another solution.

No problem, thank you for the the quick response. Ohh okay, makes sense. A solution or workaround would definitely be appreciated though. I have 6 people who could play the game, but unfortunately 5 controllers (including the PC keyboard) :(

I guess we could take turns for now lol
