Report a translation problem
I wish Leopard Cat's final speech (after he's come back to Liao's room) would have gone like this:

Leopard Cat regretfully admits that yes, he wanted to eat Liao's spirit. In the beginning, he did not care about Liao whatsoever. All of his romantic gestures and cute behaviors were merely Senpai's personality coming through, which Leopard Cat was ok with since it was helping him get close to Liao. He was merely a yaoguai, driven by his desire to eat.
Leopard cat then explains that as the days and weeks went on, something inside of him started to change. He was starting to... actually care about Liao. When he realized this, he became conflicted. The more time he spent with Liao and the other cats, the more he fell in love with Liao. Still, though, he was consumed by the desire to eat Liao. "Why do I care about Liao at all?" he wondered. Was there something pure about Laio? Were the other two cats having an impact on him? This conflict between loving Liao and his desire to eat Liao was absolutely tearing him apart.
In the end, Leopard Cat's yaoguai nature overcomes him, and he creates the scheme to get Liao's spirit. It wrecked him to do what he was doing, but he didn't have the strength to resist the urge. Leopard Cat admits that, even now, he has the desire to eat Liao despite loving him. He apologizes for what he is, and expresses his hatred for his evil nature.
Lin Hu, then touched by Leopard Cat's remorse, and seeing that there is a little bit of goodness inside of Leopard Cat, takes pity on him and gives him part of his spirit so that Leopard Cat will have the strength to behave like a normal person.

Now, even besides Leopard Cat's poor character, I don't think Nekojishi has a great ending, but I could at least be at peace with it if Leopard Cat was the way I described.
TL:DR: The true ending would be way better if Leopard Cat expressed his love for Liao, and expressed genuine remorse for his yaoguai nature.
Personally, I like the ending with all 3 cats because the others are just so damn sad. I haven't even gotten to all of them because after the first 'true ending' with Likulau killing LC, you end up with none of them in the end and that's super depressing. So I'll take evil LC over nothing (and truthfully, he's my favorite anyway despite everything). But I can understand your dissatisfaction with what is pretty much the happiest of all the endings, OP.
The problem is that LC in his nature is "evil" like he explains an animal doesn't know if it's good or bad to eat others. But for him he realized this to late either after his first or second human. So at that point he believes that he must get stronger to survive as he said in the yaoguai world you will be eaten or killed by others stronger than you. Also he did express genuine remorse for it after Lin Hu changes him.
This is in his nature. At this point in the game as he said he can't change as he even stated when you offered to build his own temple he in his mind denied it feeling that you were lying to him.
So in his nature he won't ever be able to do that. The entire point of it was that Liao fell in love with LC even with his initial personality.
