Also no, all my baristas as right next to the castle.. Extremely concentrated fire.. I also gave them all really tall towers to max out their range.
Extremely concentrated fire from one point -- once the dragon reaches it, you'll lose a lot of that firepower very quickly.
The trick is to spread your towers out a little but make sure that multiple towers overlap key targets (like the castle, training buildings, and any other big/expensive buildings that you want to protect.) Ideally if you build the dragon statue then put a ring of ballista towers around it so that no single dragon can wipe out all of the towers quickly, but all of those towers can fire upon the dragon that's been lured by the statue.
As for the other statues: one grows trees, I think one has a chance to convert or smite vikings.
