Maximum Population
So I searched seeds and found one with a lot of land, and started a world in No Hostiles mode to see just how many people I could recruit. I covered the entire island, and min-maxed my Food production with people, wood for charcoal, etc.

The most amount of people I managed to get was 3,348.

Has anyone else had any luck acheiving 5,000? Or even higher?

I feel like maybe it can't be done as of now, but in the future when maybe better housing/food production is available.

5000 is a very lofty goal. I have not messed around with the map seeds a lot, but I don't think it's very likely. Assuming pierwindmills,reservoires, GM farmers, and primarily very fertile soil you would need between 333 - 410 farms to reach that carrying capacity.

build bakery's that give 4 bread from 1 wheat. so that you wont need alot of farms.

Yes you are right. Building bakeries on piers is probably a good idea. My only issue with this idea with respect to maximum population is that it requires a forester to be on the map to produce charcoal. I don't really know if OP wanted maximum stable population or to store up food and go for a population boom, which will lead to mass starvation.

I just wanted to see if I could acheive 5k population for the acheivement. I only bought this game last night, but I'm really enjoiying it and I'm trying out different challenges for myself. 5k being one of them.

I have been able to maintain a 4k population with it being self sufficient but once you go past that you will run out of space unless you get rid of a lot of happiness buildings to build more houses and farms unless you use town squares to boost your happiness.

I did do a save and did that to get to 5k for the achievement but currently it will be not something you can get without a bit of abuse like that and maintain a healthy city.

Here is my main 4k healthy city and I am sure I could fit more in it and maintain it on it's own but each of my houses are at max short of them being near water for that bonus since I filled it all in for piers to be able to build on.

2000 for me so far, but i didn't really lay it out all nice and spiffy. The map sizes are too small as far as i'm concerned to have several independant zones all working towards the common population goals.
May i ask......what do i do next.... when i have 814 population on Year 190 with stable happiness and food and material and basically everything....and covered 90% of the land with like Defences.4 Skyscrapper with Ballista tower than can shoot the entire map....ugh straight 8 hours non stop X( missed my whole sleep.

You will need to build piers to make more area to build on.

If you have done that and still don't have enough space your map seed may had been limited so try finding a better one in the link here : http://steamcommunity.com/app/569480/discussions/0/2765630416826440295/

Otherwise you will need to squeeze things together and compact it if you can to make more space such as you can see in my screenshot where my foresters only need 1 tree to function really so you can limit their space used.
Guess its decide XD i heard updates are coming!more content! so guess ill buy it and wait for the update :)

It takes a lot of optimization to go beyond 5K. I was at about 5.4K with a stable population - no starvation, no issues with vikings, dragons, or plagues.

My current population cap is just over 6K, but my population is usually about 5.8K. (Festivals will quickly max it out, but then it drops. At 5.8K it is only shirnking very slowly.) There is some but not much starvation normally, although I lose a lot of people in rainy years. And I don't have enough hospitals, since plagues kill over half the people who get sick.

I've seen a screen shot of someone's kingdom where the population was a little over 7K.

FYI on foresters - their productivity really takes a hit if they don't have three trees.
