The exact process is IMHO a mechanics bug, nobody can agree, so the mechanic is irregular and inconsistent with the UI up to this point, needs a tweak.

Check in your completed quest list (press Q) for the "Tame an animal" quest :

Click on it and in the quest detail you'll see what can be tamed :

You'll probably need 1-3 traps per animals.
The actual description of the process I can find is not clear still, and that's about 30 traps along - is it graphics-card dependant?
Once the trap is successful, your target will be pinned down under the trap for a short while.
Move to the traped animal and, while pressing Space Bar, you will see a "Tame" function. You need only to click once on that to complete your taming (as it is more shortly explained in the quest, see 2of2).
A big pity, because up until this point I was totally in love with the game, simple graphics, slightly jerky camera control, the annoying crafting menu that always requires 2 clicks when one will do, the slightly irregular quest progression and so on just take away from the game leaving it looking like abandonware. I like the abandonware scene, and for Force of Nature, the premise here is just so unique in the busy landscape of junk survival games as having real promise.
The fact you cannot kill the rabbits, is just plain daft. Nor can the character run, and throwing a trap is incorrect, it should called be a net, the graphic is of a net, not a trap and so it's not consistent with real survival techniques. Which would be okay if it was not for the way the same net catches a cow can be used to catch a chicken, leaves one feeling; short changed.
/edit I hate youtube explainers, but this one is pretty good https://www.youtube.com/watch?v=Gm5w0yVTERM
I caught a chicken on the second attempt (at distance) after watching this clip.
For rabbit, I'd suggest throwing rocks (can be crafted from stones at the crafting table). Rabbits are useless though since they just give you meat and you'll get a lot of it just from gathering pelts and claw/fangs later on. You should rather fry fish early on (fishing pole + worms that drop from earth patches).
Finaly, starting at level 7 you'll start to have some items that increase your movement speed. Their combined effect along with some of the floor decorations (also starting at level 7) is rather substantial.
A thing I really like about the game is the gradual progress, some things still feel a little less polished, but I enjoy this game because the pace is nice and peacefully opening up to the player. I notice fishing is unlocking now, and so is the option to just throw rocks. Hmmmm. Time to start again fresh i think.
It LITERALLY lists what animals can be captured right on the trap and also on the recipe inside the crafting table.

I have never seen the trap work on the first (successful) throw, but generally i get a successful taming on the 2nd or 3rd.
Later you will be able to make Chain traps, which are used to capture /tame goblins... be prepared to waste LOTS of traps trying to tame a goblin.... Since goblins don't generally run away from you, it's quite easy to hit them with the trap. but it usually takes quite a few traps... It usually takes me between 8 -20 chain traps to tame a goblin and that's with direct hits every single time...
It's not a bug when traps don't work... that's the game mechanic that traps have a chance to fail ... and it's working perfectly lol.
