In most cases, only the attributes of the weapon in the main slot is considered for attacks (type resistances and range mismatch penalty), with the main benefit of a shield/secondary weapon being the stats they give you. The Shinobushi dual wield ability enables you to attack with two weapons if you have at least S-proficiency for both of them, and Peer Fortress has an ability to get increased chance to redirect hits for each katar they wield.
Regarding the stronger enemies, the first area of the game is the only place where this happens, you don't really need to worry about breaking walls after that. The game will basically let you know when to go there, and there's no point in exploring that part before then.
Karma can be gained from events or killing specific enemies, and there's a repeatable petition to reset it back to 0 (will be available later if it isn't already). It's generally a negative thing (notably increases your risk of taking gore crits), but there are some things that benefit from higher karma.

Plus, I think my previous game experiences in these type of blobber games helps out when I need to, it's just NIS games tend to be too complicated in some cases ( *cough* Disgaea *cough*). Plus, there are some things that aren't well explained in this game yet, so it'll probably just be expanded upon in later stages.

This is a great resource that I've referred to many times. I think it's pretty straightforward and readable though. Maybe it's too straightforward and you're missing context for some of the things?
I'll come back to the guide when I need further in depth assistance, so I'll keep this in mind.
