Finished the game without all the memories
I found 34 out of 36 memories and still beat the game

How is this possible? Why is it possible? How do I locate the missing memories?

Probably missed some of the side memories, the ones with white smoke, instead of red smoke at the fire.
Choose "Chapters" from the main menu, and scroll through the chapters to see which ones contain a missing memory, and replay those chapters, focusing on finding the memories you missed.

There's no way to tell if a chapter has a missing memory, only the number of Mushrooms and Relics

White smoke? From memory, all memories have red smoke.
Anyway, yes, it's possible to break barriers without finding all memories. Especially Act 1 and Act 5. Contrary to the mushrooms and collectibles, they aren't hidden, they are just barely off-road. A second playthrough and you should easily hit all of 'em.

Memories with bright red smoke are the ones needed to progress the story. The ones with the white smoke, like the one at the lower left in my screenshot, are "secondary" memories, not needed to progress the story or finish the game.

And you are right, my bad. I thought the chapters showed the number of memories as well. Kinda sucks that they don't, I still have 4 to find, according to the counter on my achievements page. Trying to play chapters I know had many, like the one shown above, since I am sure those are the ones I missed. You can't finish the story without collecting all of the red smoke story-related memories, AFAIK. Chapter 2 has a number of them, IIRC. And I missed the mini game behind the waterfall, which I am told is also in Chapter 2. Going for that achievement right now, and the relic "beating" the minigame is supposed to give you.

Shoot, my memory failed me (or there was an update, but more likely the former). Sorry about that.

Nah, these ones with the white smoke are really tucked away, so if you don;t go to the right spot to see them from above, easy to miss. And, lol, while I was getting the Behind The Waterfall and This Is Hard achievements, I totally forgot to try to find the path to the one in my screenshot. So... I'll be going back to that Chapter again. >.<
