I might give some tips though.
First, we want to be sure that the cause of conflict arises from gamepad configuration (or perhaps from gamepad itself). Please unplug your gamepad from machine and start the game with normal mouse and keyboard combo: if the game works normally, it means cause of issue is related to gamepad (which is what I do expect).
Then, the fact that camera rotates fast and endlessly makes me think it is something involved with mouse movement or, since we are talking about gamepad, with analog sticks/analog mode. My guess is that there is a problem with analog mode configuration in the softwares you named earlier. Hence you might want to start the game with gamepad plugged and analog mode off to make sure analog mode is causing problem.
Once you find the root cause, you know what you should change in emulation software (remember that we are talking about old videogame which might require trial and error procedure). If you have no clue at all of what settings to change, I might suggest to download a new software for using your gamepad. My suggestion is "Joy2Key" (which allowed me to play classic Dark Forces game with mouse and keyboard as a modern shooter despite the game was not meant to be played like this).
