Here is our first ship we acquire through quests:

Junk

The crucial information for me (and not included in the descriptions at vendor) was how fast the two can travel. As you can see, Junk is much faster in combat and travelling. IMO it looks worse on world map, but hey... It has better stats.
With the starting ship you can win all ship battles with speed board ( need only ubgrades for speed) if your party is high enough for the battle then ( is not wise board a ship with lv 16 captain with lv 5 hero group, you stand aigans more than 10 lv 16 enemies, even if most of them are really crap for their lv)
You realise your junk is only faster than the galeon due to the upgrades and navigator right?
My galeon has combat speed 65 and travels speed 80, thx to crew and upgrades...
I think that simply minmaxing, just because you can will not provide a good gaming experience. These people complain becasue they have to many options, and only go for the easy win option. You should be open and experience the game in different ways to see what the developers intended to do.
Or you can just minmax everything and then complain that the ships make no sense because you can simply rush things...
i can only tell you to try out different playstyles.
I can hit 95 combat speed and 83 travel speed with best upgrades (navigator still lvl 3, so it's giving only +30%).
Another thing Id like to see, maybe longer down the road, is multie ships battleing instead of just 1on1.

4-5 turns mostly, I can't call it "a lot of time in dialogue".
You know - maybe better to choice&equip ship well-suited for boarding, and not use starter ship / most expensive ones ;)
It's don't matter anything since you will get ~6-7 companions, level up them all and give some good+ gear to everyone. Boarding get trully broken and extremly easy, even on PotD.
