Do crits stack?
Went with a crit-fisher build, Orlan (+10% hits coverted to crits), One-hander (+20% hits converted to crits) and Dirty Fighting (+10% hits converted to crits). Getting the "crits knock enemies prone" gloves, you can see where I'm going with this...

That said, I can't help but feel like the build is flawed and that they don't stack, as my crit rate is not that high. Maybe I'm just overthinking things, but as I couldn't find an entry in the encyclopedia I'm still not sure how it all works.

Do they stack, or is it just the +20% that counts?
If they do stack, is it flat +40% or some other way of multiplying them?

yes passives abilities stack. More than one item with + Crit % will not stack.
Edit: The Orlan ability requires attacking the same thing as another in your party. Also If you have low perception you'll have low hit %. If you don't hit you can't crit.
Max perception.

I thought it works additive, although the effect will not be as high as you may think.

When you make 100 swings at the enemy, let us say that 25% are misses and out. 20% are grazes and out. 45% are normal hits and 10% are crits. If you convert 40% of hits to crits, that would be calculated off the 45% normal hits, which are 18 hits. That means 28 critical hits instead of 10, while you might expect 40.
There is an ability that converts 50% of grazes to normal hits (fighter). If they fall then under the normal hit to crit ability I don't know. It might well be that abilities work off the natural hits and misses. But if they would then become partially converted to crits, it would be a means to get more crits, because you would have more hits to work with - of the 20% grazes in my example, you would turn 10 into normal hits, of which 4 would graduate to crits.

Those numbers are completely bogus, I put them in just for the demonstration - if you have your real numbers, you can replace them. I have not parsed any fights and have no idea what the hit-to-miss ratio really is, and how often you graze.

Without actually delving into parsing the fights, if you look at your stats with all thos +crit percentages and a high perception you should see more crits than hits. It worked that way in beta and rogue hasn't changed afaik.

Atm I have excellent accuracy, so I don't think that's the issue. I'll do some more testing tonight and see how it all works out.
