Aside from the obvious either blowing a hole in a wall or pulling mobs toward to blow up, no. Well I suppose you could blow up yourself and your party for fun too.

I killed 4 enemies at once by shooting up the gunpowder that dropped from them.

Just tested xp gains out of curiosity, and killing enemies using gunpowder barrels results in very minimal xp gains. Killed the same group of 5 enemies manually after using a barrel to test, and each party member had an extra 100 xp.

they were sometimes used for mining in the 1800s I believe

Just retried the game. Sometime it can blow up a wall, sometime do nothing meaningful.
