Pretty sure I've made more than 10 Noble Rots though in my current game, but maybe it doesn't count if it isn't a 5-star. I had been stuck at 4 stars because the fungal rot stays with no indication, which I just realized.
I checked my wine log. My last 12 Noble Rot bottlings were 5-star ones (from only 3 batches of grapes). This was to get the achievement, and I got it. Before these there are 36 Noble Rots of various ratings, mostly 4 stars, plus a few failed ones (normal Semillon).
Yeah, I made Semillon Noble Rot exclusively for the majority of the playthrough, because it's so OP. It's only $1 off the 5-star price anyway.
Yes that's right - you need 5 star wines to get these achievements.

Not talking about the 10 bottling ones, but the ones where a single hit should do.
Yes, Steam sometimes takes its time to give you the achievements! They're set instantly on the game's end though, so you should always get them even if it takes a while.
