Both Fungal Rot and Overexposure disappear when your Ripeness moves back to within the 3-7 range (it may take a month, so try and keep it within that 'safe zone' for as long as you can.

I also have the situation that the vines seem to be stuck in the light growth part even in dead of Winter. I also had two harvests in one year. At September and again in December????
The growth in winter and the two harvests in one year both sound like bugs - I'll look into this.

Do you mean Fungal Rot or Phylloxera?
Fungal rot won't kill your vines. Phylloxera will.
fungal rot kills half your yeild each month.
