I don't know for "Betrayal at Krondor" (DOS game, if I remenber well), but for "Betrayal at Antara" (Win 3.1) is easy at to do (for GOG game, I haven't on Steam). I have do for French Language (but not for the VMD files inside (the videos of the book in game for the chapters) because several crashes when the videos). It works well in Windows 10 (I'm in chapter 2) my French files (archives) from the three CDs inside English language Sierra game (GOG), for the French texts and voices. I have not replaced all the files, only the good files.
If Steam uses Dosbox for "Betrayal at Krondor" you could replace the files by your German language game, I think. I don't think there is a problem for Dosbox (if you replace seriously the good files inside and know a bit the Dosbox config file). At to test.
Dosbox is a emulator for the DOS programs, so it runs all Dos programs.
Not tested (I have not the game in French language), I can't say if it works or not, with an other language.
Do a back up of this file and test with your "Krondor.001" German language.
The risk could be that Krondor.exe detect the archive is not English language.
Same if they speak only for the GOG game for the German language patch. I don't speak German, I don't know if the site is good or not.
For "Betrayal at Antara", if someone is interested, I can say how to do. It is easy and work well (to Chapter 2 tested, not after).
Pour "Betrayal at Antara", si quelqu'un est intéressé de savoir comment mettre le jeu en français, je peux vous dire comment faire. C'est assez facile à faire, mais il y a deux trois manipulations à faire avec les 3 cd du jeu original en français (que l'on trouve sur internet abandonware). J'ai testé que jusqu'au chapitre 2, pas après, mais ça fonctionne très bien. L'avantage des versions STEAM et GOG du jeu, c'est qu'elles peuvent fonctionner sur Windows 10 (mais sont vendues qu'en anglais).
May I ask you to define more exactly how did you manage to add french text to original game? What exactly files did you copy?
For "Betrayal at Antara", I have only tested on GOG game, but if for STEAM game repertory (main of the game) you have inside :

First, create a repertory where you want (it is only for past the files from the CDs for do several name changes for several files.
For CD 1 :
Go to repertory (main) of the first CD of the game, where you copy the files: RESMAP, RESMDT, RESOURCE.AUD, RESOURCE.SFX, and RESSCI.
I do not replace RESOURCE.WIN (so caution, not to take it when you copy the files).
Past them in the new repertory created before.
Now change files names as it :
RESOURCE.AUD ----> RESOURCE1.AUD (only add a 1)
RESOURCE.SFX ----> RESOURCE1.SFX (only add a 1)
For CD 2 :
Do the same things, go to CD 2 and copy : RESMAP.002, RESMDT.002, RESOURCE.AUD, RESOURCE.SFX and RESSCI.002
I do not replace RESOURCE.WIN (so caution, not to take it when you copy the files).
Past them in the new repertory created before.
Now change files names as it :
RESOURCE.AUD ----> RESOURCE2.AUD (only add a 2)

In your repertory, copy the 15 files and past them where they are in STEAM or GOG game, a message asks you for to replace, yes. The game is normally now in French language.
Please tell me if you have a problem in game, but normally it works well (tested only to chapter 2).
About the videos when the books (chapters), there is a technical, but the videos in French language crash about 1-2 min after to be playing in the game. They are the files *.VMD in the CDs. So, I don't replace the originals videos in English language *.VMD. I have no fix for that, so I do not replace them.
I don't know for Russian game, but if you have the 3 CDs originals of the game, it would works, too (normally).
Thanks a lot for detailed explanation. Unfortunately seems like this method doesn't work for me, since russian version was on 1 CD and these 1,2,3 archives are packed in 1 in my case. This is how russian version of the game looks like:

Anyways, thanks for help. Will play in English, it's even interesting to hear different voices of characters familiar from early childhood :)
So the better music is not from the Steam-version but instead from the CD-version of the regular game?
If all in one, test to do several copies of your RESOURCE.AUD and rename it several times as it, past them in STEAM or GOG game.

RESOURCE.AUD ----> RESOURCE2.AUD

I don't know if it would be works or not, when the program will research part in RESOURCE2.AUD or RESOURCE3.AUD.
About "Betrayal at Kondor", it is possible to open Krondor.001 with the program "Game Extractor" and normally to save it if not basic version of "Game Extractor".
