So correct me if I'm wrong, but the order of the canon goes:
1. Danganronpa Trigger Happy Havoc
2. Danganronpa Another Episode Ultra Despair Girls
3. Danganronpa 2 Goodbye Despair
4. Danganronpa 3 End of Hope Peak High School

IF that's right, then it'd be a bad idea to watch the End of Hope Peak anime before playing games 2 and 3

Yes, that's exactly how it goes. Although DR3 is split into three parts. One of those, Despair Arc, takes place before even DR1.

That's the chronological order. But the intended order of playing/watching is:
1. Danganronpa Trigger Happy Havoc
2. Danganronpa 2 Goodbye Despair
3. Danganronpa Another Episode Ultra Despair Girls
4. Danganronpa 3 End of Hope Peak High School

DAEUDG has spoilers for the D2. And then D3 apparently (I have not watched or played yet) has some spoilers for DAEUDG.
