I love sailing but I cannot justify buying this either.
You can play as a singleplayer, you will have an online chat, and if you want someone to be your crew, it is there too.
I'm currently, save for a few people, and enjoying the company for a while, sailing alone from Hawaii to LA.
After looking at the weather, I realize it was a terrible idea to sail at this time of the year, I could change it, and go somewhere. But I'm enjoying it either way...
I imagine that eventually you will be able to go "offline" if you don't mind downloading many MANY gigs of (rotating) captured weather data and a huge map (probably 100's of gigs).
..or you don't mind downloading small parts of the world, only to sail there.
I would definately go for getting offline access to my favorite sailing areas, where I could choose various weather conditions (stormy, nice, surfing, high winds, low winds, etc).

I would be fine with an offline mode. Let the player either download a weather snapshot that doesn't get updated while offline, or allow the player to manually set the weather specs.
As for terrain, same deal, allow a download of just the area the player wants. It's not like you're going anywhere quickly ;-). This has been a feature of many flight sims. I could just sail around the Hawaiian islands and be happy for quite a while!
