Why are some skills in green in the myrage status?

They don't transfer to other forms of that Mirage, but white abilities and perks are universal.

So I can learn stat boosting stuff on my mythril golem(That I only transfig when I need to smash something) and my copper golem gets those stat bonuses as well?

Correct. Anything white affects all forms that are shown on the same screen when you're transfiguring. It only doesn't carry over when you sidegrade. For example, Chocochick and Chocobo share white abilities but Black Chocochick does not share any abilities with those two (though it does gain levels) since it's on its own screen with no links to Chocochick or Chocobo.
