Will upgrading a weapon to red give the red illusion as well?

No, it doesn't. You need chests. Unless you p2w skins.

the blue ones are only from chest, the bogehafen (purple ones) are with ingame coins

No, upgrading won't give you the skin.
The purple glowing skin can be bought from Lohner (formerly Bögenhafen chests). But for all the other skins you have to open chests.
Some weapons have 4 different red illusions. Good luck getting them all.

Maybe if you play only one career and have 100% full books completion rate.

To OP's question: no, and it sucks. The DLC weapon skins have a better system. You actually have to do kills and kill lords on Legend difficulty to get them. So to get the skins you need to to something fun which is playing the game

No luck involved. Loot boxes and RNG are horrible. At least it's just cosmetics.
