2. Enter %appdata% within the search input and select 'OK'
3. Navigate to AppData\Roaming\Fatshark\Vermintide 2
I just uninstalled the Beta version of V2 and now I CANNOT launch the vanilla game. The laucher opens and then it informs me that the game cannot be started because it cannot find the easy anti-cheat software. I suspect that the Beta version is required, so would recommend not uninstalling it.
Update: I had to validate the integrity of the V2 files to get it working again. The Beta unistall must have had some unintended consequences.
